Coming from the “Haute Vallée de l’Aude” (upper Aude valley) in the Occitanie region, located between 200 and 350 meters altitude.
100% Malbec.
Tasting notes: Colour: Brilliant garnet red color.
Nose: The nose reveals nice aromas of jammy black fruits, with gentle spicy notes and a violet hint which is typical of this grape variety.
Palate: Generous and supple with a full middle palate. The tannins are well-integrated and velvety, offering a well-balanced structure to the wine. Delicious aftertaste with black fruit notes.
Food matches: Red meat, spicy and Mediterranean dishes, poultry, pasta and cheese.
Best served between 16°C and 18°C / 60°F and 65°F.
Serving temperature: 16-18°C (61-65°F)
Winemaking: The date of harvesting is key to get the optimal maturity of the grapes and then reveal the true-to-type aromas of the grape variety. The vinification starts with a cold pre-fermentation maceration followed by the traditional alcoholic fermentation in vats with regular extraction within the fermentation. This stage enables to extract colour and tannins. The malolactic fermentation is conducted in inox vats. There is no oaking process to give advantage to the fruit expression.
Soil: Coming from red soil and clay-ferrous soil.
Climate: hot Mediterranean climate with lots of sunlight and high temperatures are ideal conditions to produce beautiful ripeness, resulting in concentrated & fruity wines.
