Thomas Barton Réserve Sauternes

Bordeaux | Appellation Sauternes Contrôlée

Grape varieties: Sauvignon Blanc, Semillon

Tasting notes: Bright golden straw yellow. Elegant and complex with intense aromas of peach, apricot jam and acacia flower. Rich and concentrated on the palate with a perfect balance : a good acidity level and a long aromatic intense fruity aftertaste.

Food matches: Foie gras, blue cheeses, crème brûlée flavoured with orange, turbot fillet with Sauternes wine and curry sauce, dried apricot and almond turkey or as a sweet aperitif ! Best served between 8°C and 10°C.

Serving temperature: 5-8°C (41-46°F)

Winemaking: Traditional winemaking methods with a minimum of 2 months of ageing on the lees in French oak barrels. Picking berry by berry as only the rotten ones are taken (5 pickings for the 2016 vintage) – Pressing of the berries – alcoholic fermentation in oak barrels in order to enhance volume and concentration

Soil: Gravel, chalk and clay.
Climate: Oceanic micro climat, mild and humid, when the cold Ciron river comes out of the forest, it meets the warm air and the evaporation contributes to the spead of a noble rot: the Botrytis !
Aging: Ageing on the lees with stirring in oak barrels for 2 months.
