Grape varieties: Sauvignon Blanc

Tasting notes: Color: Pale straw yellow color with green hue.
Nose: Concentrated notes of grapefruit aromas, combined with delicate floral notes and chalky hints.
Palate: Complex, fruity and crisp mouth feel. Searing acidity leads the core of the palate delivering a long and citrusy finish.

Food matches: It matches perfectly with seafood, especially oysters, goat cheeses (Crottin de Chavignol, Selles sur cher…) or as an aperitif. Best served between 10°C and 12°C / 50°F and 54°F.

Serving temperature: 10-12°C (50-54°F)

Winemaking: Hand harvest – gentle pressing – high settling – fermented at low temperature (14-18° C) – no malolactic conversion – 3-5 months of aging on fine lees.

Soil: Limestone and marl
Climate: Continental climate with contrasting winter and summer temperatures.
Aging: Environmental Certification: HVE (High Environmental Value) certified.
Sugar levels: < 1 g/l
