“Hook’s Ear.” This name is the local name for shell sediments found in the soil of the area.

Grape varieties: Sauvignon Blanc
Tasting notes: Color: Pale yellow color with light golden highlights.
Nose: Intense aromas of grapefruit, combined with delicate floral notes (acacia) and notes of flint.
Mouth: Complex, fruity and crunchy. The attack is very mineral followed by a full and fruity mid-palate evolving into a long, refreshing, gentle finish. Perfect balance for this sunny vintage.
Food matches: Perfect with seafood, especially oysters, local cheeses (Crottin de Chavignol, Selles sur Cher, etc.) or as an aperitif.
Serving temperature: 10-12°C (50-54°F)
Winemaking: Pressing of the grapes – alcoholic fermentation carried out at 20°C.
Soil: Limestone and marl
Climate: Continental climate with contrasting winter and summer temperatures.
Aging: On lees in vats with oxygenation control.
Sugar levels: < 1 g/l
